Since 1965, Luciano Porciatti and his sister Anna, along with their entire family, offer the best variety of Chianti-style cured meats, produced using the methods and secrets of the past, in their traditional shop in Radda in Chianti.
Luciano Porciatti learned the art of pork butchering in the Chianti style from his father Gigi who, during the cold winters of the past century, went from one farm to the next, gathering around him entire families for the most important rural rite: pork processing.
Tradition continues today with Luciano and his son Francesco: from the selection to the preparation and finally the seasoning of the meats, each step is rigorously performed by the Porciatti family members so as to guarantee unique products to be found only in the Chianti area: soprassata, buristo, sbriciolona, capocollo, salami, prosciutto and the renown “Tonno di Radda”, “Lardone di Radda” and "Mortadella del Chianti".
Every day, in the butchery and gastronomy counters there are Florentine-style T bone steaks and fresh cuts of beef, pork and chicken, in addition to traditional Chianti-style food preparations: porchetta, or roast pork, Tuscan canapés, roast chicken, roast beef, lasagne with meat sauce, oven-baked chine of pork, Tuscan ragout, meat loaf, skewer meat, pork- roasted duck, and Chianti stew, just to mention a few.
The recipes we use are the same as in the past and the foods are processed, prepared and cooked or baked in our laboratory.
